As a foodie visiting Vietnam for the first time, I wanted my final dinner to be something memorable. After comparing several fine dining restaurants, I chose T.U.N.G Dining—and it was definitely the right choice. I really enjoyed how the menu showcased ingredients from different regions of Vietnam while presenting them in a modern and creative way. As an Asian, I especially appreciated the thoughtful use of local herbs and spices throughout the meal. The first few appetisers were good but didn’t leave a strong impression. The sticky rice looked beautiful, though the flavours felt a little overshadowed by the accompanying condiments, and the vegetarian skewer had great potential but could have captured the smoky BBQ flavour better. The grouper was fresh but quite subtle. From the second course onwards, the experience became exceptional. My favourites were the oyster with green apple, cucumber and ginger sorbet, the otoro with ambarella and ginger foam, the carabinero prawn (especially the head!), the incredibly creative one-bite pho, the pork belly, the toothfish with Indian curry, and without a doubt, the A5 Wagyu—the best dish of the night. The sweet potato dessert was also a fun surprise, tasting like a roasted sweet potato while being served cold. There were only a couple of minor misses for me. I couldn’t really taste the Tay Nguyen green chilli in the prawn dish, and the chawanmushi was a little too acidic, making it hard to appreciate the duck liver. A special thank you to the team for thoughtfully preparing alternative dishes for my mum, who doesn’t eat beef. It wasn’t just a substitution—it was clear that the same amount of care went into every replacement. The service was warm, attentive and genuinely friendly throughout the evening. Overall, T.U.N.G Dining was a wonderful way to end my first trip to Vietnam, and a memorable final night in Hanoi. I’d happily recommend it to anyone looking for a creative fine dining experience in Hanoi.

Honestly unsure why this phenomenon restaurant doesn’t have two Michelin stars… it’s the best quality food and the best experience I’ve ever had. The chef is so creative with the local ingredients. The courses are presented so beautifully. The timing of each dish’s delivery and presentation was perfect. The wine flight paired superbly with the meal. I’ve been eating at Michelin stars restaurants around the world for years… and this is the best restaurant I’ve ever been to.

Took my wife for our anniversary dinner here. It exceeded all our expectations. The service staff, the sommelier, the food and presentation, as well the accompanying explanations were top-notch. We have been to many fine dining establishments around the world, but this has to be our favorite so far. Kudos to the team, and look forward to experiencing their hospitality again in the future. P.s. The price was also pretty reasonable for the standard of food and service offered.

An absolutely unforgettable dining experience. Every single dish was a masterpiece—beautifully presented and packed with incredible flavors. The steak was phenomenal, perfectly cooked and literally melted in my mouth. The seafood was exceptional, especially the oyster, which was paired with such a unique and delicious sauce that I’ve never tasted before. The dessert with black caviar was surprisingly amazing and one of the highlights of the evening. The wine pairing was flawless—each wine complemented its course perfectly and elevated the entire experience. On top of that, the atmosphere is elegant and inviting, and the staff are incredibly attentive, professional, and welcoming. Truly one of the best restaurants I’ve ever visited.

During our recent trip through Vietnam, one dining experience that completely exceeded expectations was T.U.N.G dining. Securing a booking here felt like a win in itself, but from the moment we arrived it was clear why Chef Hoang Tung and his team have built such a reputation in Hanoi’s fine dining scene. T.U.N.G’s philosophy centres around seasonal Vietnamese produce and modern techniques, with each dish designed to showcase local ingredients in a completely unexpected way. Across roughly 18 courses, the menu felt less like dinner and more like a carefully curated culinary journey. Thankfully each course was only a few bites because by the end we were absolutely full. The service was flawless without ever feeling stiff or overdone. Plates, cutlery and wine glasses seemed to appear and disappear unnoticed, almost like sleight of hand. The wine pairing was equally impressive, with staff topping up glasses in small pours to keep each wine at the ideal tasting temperature throughout the meal. Every course had a story behind it, highlighting regional Vietnamese flavours in creative and refined ways. Some standout dishes for me were the Ha Long peanut worm pho, which was unlike anything I’ve tasted before, the beautifully rich Satsuma A5+ beef, and the combination of Moc Chau strawberry with veal that somehow balanced sweetness, acidity and savoury depth perfectly. Dessert finished the experience on a high with an incredible lychee and tofu creation that was delicate, refreshing and beautifully plated. What impressed me most was how T.U.N.G manages to feel both deeply Vietnamese and incredibly contemporary at the same time. The entire experience showcased not just technical skill, but a real respect for local ingredients and culture. It’s easily one of the most memorable meals I’ve had and if I ever return to Hanoi, this would be at the very top of my list to revisit.
