What we ordered • Grilled Marble Eel • Stone Crab Noodle Backstage has a calm and elegant atmosphere with stylish décor that gives the restaurant a refined feel. It was very quiet when we visited, with only a few other tables occupied, which did make the space feel slightly empty at times. What really stood out was the service. The staff were genuinely friendly and eager to help, which made the experience feel welcoming from start to finish. The grilled marble eel was easily one of the best dishes we had during our time in Vietnam, packed with bold yet clean flavours that let the quality of the eel shine through. The drinks were also excellent and crafted beautitully. Overall, a refined dining experience with standout service and some memorable dishes. Rating: 8.5/10 Bite Worthy? I'd like to leave the best review for this establishment, not so much for the food, but for the service and hospitality of the staff. Pamela (Trang) and Tam provided the best service, a wonderful atmosphere, and took all our requests into account. One serving of Pho Bo soup was perfectly shared between the two of us, and the spring rolls, as recommended, were the most frequently ordered item. They were of the highest quality, fresh, and delicious. Several times, their hot local bread was served as a compliment with their sauce, and I think it's the best complimentary bread I've ever tried, surpassing many bakeries and restaurants in Asian countries! I also especially appreciate the incredibly delicious complimentary dessert in the form of candy domes! These are truly heartfelt compliments. They alone are worth coming to this place! Therefore, we wholeheartedly recommend you definitely experience dining at this restaurant and trying their cuisine, their compliments, and their inner core of top-notch service. Thank you! We wish the entire restaurant team all the best!

Backstage at the Capella Hotel in Hanoi, Vietnam, is a high-end restaurant recognized by Michelin, known for its theatrical, vibrant decor featuring Art Nouveau and Art Deco glamour reminiscent of The Great Gatsby. The space boasts dramatic, colorful, and luxurious designs inspired by opera costumes and murals, offering a stylish atmosphere. It specializes in refined Northern Vietnamese cuisine and provides attentive service. We tried The Michelin Experience set menu, a 5-course culinary journey highlighting refined Northern Vietnamese flavors. It combines modern techniques with seasonal, local ingredients, presenting each dish as a work of art that enhances taste and flavor. We also sampled Vietnamese classics like charred, air-dried pork jowl, known for its tender texture and balanced flavors. Their version of traditional buncha was excellent as well.

⭐⭐⭐⭐⭐ | A Quietly Confident Culinary Stage Backstage at Capella is one of those places that doesn’t try too hard to impress you — and that’s exactly why it works. - The space is calm, elegant, and slightly reserved, like a well-trained performer waiting behind the curtain. No unnecessary drama, no forced “wow factor.” Just good lighting, good taste, and a sense that someone actually thought about how guests should feel here. - We went for the tasting menu, and what stood out wasn’t shock value, but balance. - The flavors are clean, layered, and disciplined. You can tell the kitchen isn’t chasing trends. Instead, they focus on precision — acidity where it should be, richness never crossing the line, seasoning always under control. Every dish feels edited, refined, and intentional. - Seafood was particularly strong: fresh, confident, and treated with respect. Sauces were restrained but intelligent, adding depth without stealing the spotlight. Even the simpler plates carried quiet complexity. - Service deserves a mention too — warm, observant, and never intrusive. The staff know when to explain, when to step back, and when to let the food speak for itself. Backstage isn’t a place for viral moments or flashy plating. It’s for people who enjoy craftsmanship, rhythm, and subtlety. The kind of restaurant that doesn’t shout, but stays with you after you leave. - Not a performance for the crowd. A performance for those who are paying attention. Would gladly return.

Great service and gorgeous ambiance. While the decoration isn't my style, it was very pleasant and tasteful, it felt like a Prada store. The staff was very attentive and friendly, even though their English wasn't that good. I ordered a la carte. The food was good, with good presentation and flavors. However, I was surprised that the quality was only slightly higher than in the many sidewalk eateries in Hanoi. Especially the beef and pork meats were mediocre; chewy meats are the norm in Vietnam, but I was hoping this restaurant to do better. The bread was great, and the dessert was completely disappointing; despite claiming that they use Marou chocolate, a local brand that serves great desserts, it had barely any chocolate flavor. At the end of the day, it's an inexpensive fancy restaurant, and if you don't have high expectations about the food, it's totally worth it for the rest of the experience.
